A standard Android app with no modification is able to access the gyroscope and accelerometer.
It looks like the minimum delay is 5000 microseconds, or 5 milliseconds, which means that the sensor could theoretically generate readings 200 times a second.
There’s also a gravity sensor.
There’s also some interesting temperature sensors.
